Split Pea Lentil Curry
- 2 carrots, chopped
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 tsp curry powder
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 2-3 Tbsp chopped fresh cilantro
- 1/2 cup lentils (I used brown)
- 1/2 cup dried split peas
- 2 cups vegetable stock
- salt and pepper to taste
Bring to a boil and turn the heat down. Cover and allow to simmer for 25-30 minutes or more, or until the lentils are soft enough to your liking.
Serve over rice and top with fresh cilantro.
